Quick and Easy Shrimp Scampi

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Yield: 4-6

Ingredients

  • 10-12 oz. dry spaghetti or linguini
  • 3 Tbsp. butter or ghee
  • 2 Tbsp. extra-virgin olive oil
  • 6 cloves garlic, minced
  • 1 1/2 pounds large uncooked shrimp
  • Juice and zest of two lemons
  • 1/2-1 tsp. red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup fresh parsley
  • 1/2 cup Panko bread crumbs
  • 1/2 cup grated Parmesan cheese (optional)

Instructions

  1. Bring pan of salted water to a boil and cook pasta until al dente.
  2. In cast-iron or heavy saucepan, heat butter and oil. Add garlic and cook 20 seconds.
  3. Add shrimp, lemon juice and zest, red pepper flakes, salt, pepper, parsley and bread crumbs. Cook until shrimp barely turns pink, turning often, which should take about one minute.
  4. Add approx. 1/2 cup pasta water and cook another minute.
  5. Serve over pasta with parmesan cheese, if desired.

Notes

*If desired, after cooking, put the shrimp under the broiler for just a minute to brown the bread crumbs.
