Pizza Three Ways: “As seen on TV!” Ha ha. Yes, friends, Kiwi and Carrot made its television debut today on a local lifestyle tv show called “The Place.” Wahoo! Such a riot.
And the best part was that it was all about PIZZA! I have said this before, but I LOVE pizza. But I’m very particular. It has to be made with a delicious dough and the freshest ingredients. And what ingredients would be my fave, you might ask? You know, that depends on the day. That’s the brilliant thing about homemade pizza. Literally almost anything can become a pizza topping.
Pizza Three Ways shows you some of our faves…which, BTW, look startlingly similar to our “Avocado Toast Three Ways” ingredients (Hint: two dinners/same ingredients…but they’ll never realize that you’re a repeater! Smart, right?!) but you can top a pizza pie with whatever your little heart desires at the moment.
For example, I’m opening my fridge right now to see what pizza I could create at this very second. How about leftover chili, grated cheddar, green onions and avocado? Or butternut squash, kale, bacon and bleu cheese? BBQ chicken, red onion, brussels sprouts and Gouda? See how FUN this is?
Whip up a little dough, divide it up and let everyone make their own personal pizza pie from what’s in the fridge. Have a contest to see whose is the most creative, the most delicious, the wildest. Family Fun Night at the Dinner Table…what a grand idea!
Ingredients
- 2 Tbsp. dry yeast
- 2 Tbsp. honey
- 1 1/2 cups warm water
- 4 Tbsp. extra-virgin olive oil
- 4 to 4 1/2 cups all-purpose flour
- 2 tsp. kosher salt
- Cornmeal for sprinkling
- 1 cup cherry tomatoes
- 1 cup fresh basil
- 1 pound fresh mozzarella cheese
- 1/3 cup extra-virgin olive oil
- 1-2 cloves garlic
- 1 1/2 cups fresh blackberries
- 1 cup artichoke hearts
- 8-10 asparagus spears
- 12 ounces prosciutto
- 1 pound fresh mozzarella cheese
- 1/3 cup extra-Virgin Olive Oil
- 1-2 cloves garlic
- 10-12 small steamed beets
- 1 cup goat cheese
- 1/2-1 cup pistachios, crushed (optional)
- 2 cups arugula
- 1 cup balsamic vinegar
- 1 Tbsp. pure maple syrup
Instructions
- Combine the yeast, honey and warm water in a standing mixing bowl. Let sit for about five minutes until the yeast begins to bubble.
- Add the oil, 4 cups of flour and salt. Blend on low using a dough hook.
- Increase the speed and knead for 8-10 minutes. Add more flour as needed if the dough is sticking to the sides of the bowl. (It should stick to bottom of bowl but pull away from sides.)
- Cover the bowl and let rise for 30-40 minutes.
- Preheat oven to 425 degrees.
- Divide dough into 4-6 pieces. Roll out to desired thickness. Top with favorites (see below or see in your fridge/pantry;) and bake for 12-15 minutes.
- Slice tomatoes in half. Slice cheese.
- Add garlic to oil.
- Brush rolled-out dough with garlic oil and add toppings.
- Cut artichoke hearts into fourths.
- Cut asparagus into bite-sized pieces.
- Slice cheese.
- Add garlic to oil.
- Brush dough with garlic oil and add all toppings.
- Slice beets.
- Place beets and goat cheese on pizza. Bake.
- While pizza bakes, make a balsamic reduction: Place vinegar and maple syrup in small saucepan and simmer 15 minutes, until reduced and thickened.
- When pizza is cooked, cover with arugula and sprinkle with pistachios. Drizzle with balsamic reduction.
Notes
Blanch asparagus for five minutes before baking, if a softer taste is desired. If not, asparagus will add crunch to the pizza. Trader Joe's and sometimes Costco have fresh, pre-cooked beets. If buying raw beets, quarter each beet and steam over 2 inches of water for 15 minutes, until tender. Rub cooked beet with paper towel to peel. Slice when cooled.

I love pizza nyself. Congratulations to being on the local tv show! Woohoo, i bet that was fune. My favorite pizza is the Margherita pizza! It has been my favorite for a while.
