So…New Year’s Goals.
If you google the most common New Year’s resolutions, you can bet number one will be “lose weight” or “live a healthier lifestyle.” No wonder, after all those holiday treats of gingerbread cake, German Pancakes and ice cream with grandma’s hot fudge sauce. It’s time to TAKE CHARGE of your health.
And Kiwi and Carrot is going to help you.
During the month of January, we’re hosting a “Veggie Challenge!”
Here’s how it works:
1. You pledge to join the veggie challenge. It will begin Monday, January 9th, and run for four weeks.
2. You’ll receive a weekly email with a list of veggies. Your goal is to eat those veggies by the end of that week. To help you, we’ll provide some simple but delicious recipes for you to get those veggies in yo’ belly.
3. By pledging to join the veggie challenge, you’ll be entered in all four of our weekly giveaways. (We’re teaming up with some awesome brands like Kodiak Cakes and Whole Foods, so GET EXCITED!)
So, why do you need to join the veggie challenge?
*Those who eat more veggies as part of an overall healthy diet are more likely to have a reduced risk of some chronic diseases. Yay for a healthy body and happy mind!
*Vegetables provide vital nutrients and minerals important for your health and maintenance of your body.
*Veggies are naturally low in calories and high in fiber, which keeps you full while helping you to manage your weight.
*Vegetables have a high water content, which helps your body stay hydrated.
I could keep going…but I think you get the point. Veggies are good! And we don’t eat nearly enough of them.

My daughter and I have been trying new vegetables and going meatless at least 1-2 days a week. I’m all for trying new, interesting vegetables and other foods. We only recently discovered quinoa and just love it. We frequent a Japanese mall that has a very large grocery store with many items not available at our regular grocery. When the weather gets warmer, we’ll be heading out to Chicago’s Chinatown and have fun shopping for other vegetables and fruits there. Count me in!
Linda, That is awesome that your daughter and you have been trying to incorporate new foods and vegetables in your diets! And that is SO fun to be so close to Asian markets. I spent 2 months in Southeast Asia and fell in love with all the fresh and unique produce there. And thanks for supporting the Veggie Challenge! We would love to hear how you like the recipes. 🙂
