So, technically, this isn’t really a recipe. Besides the balsamic reduction, there is no cooking whatsoever. Okay, so you toast the bread. But that’s it! The beauty of avocado toast is its simplicity.
I love simplicity. When we go to our cabin, we live simply. We don’t have a lot of stuff up there, cluttering our lives. It’s just the cabin: a bed, a basic kitchen and a warm blanket by the fire. So simple! When we come home from a weekend at the cabin, I honestly want to throw everything away in the house. Now, our house is pretty clean. I don’t like a lot of extra stuff. But the cabin is even more simple. No extras. No frills. No stuff. No distractions. No errands. No computer. Not even a TV. Being there cleanses the soul. Our minds and bodies need to de-clutter occasionally. I always come home from the cabin refreshed and calmed.
Avocado Toast 3 Ways is like that. A lowly piece of bread. A perfectly ripe avocado. And endless possibilities just waiting in the fridge! Open the door, pull out the first thing that catches your eye, and most likely, it will taste good on avocado toast! Drizzle on a little balsamic glaze and, well…you know our feelings about balsamic glaze. I don’t need to say any more. #elixiroflife.
Live simply. Throw away your old stuff. Do yoga. Be still. Listen to the silence. Pray. Breathe. Go on a walk. Eat avocado toast.
- Favorite fresh bread
- 1- 1 1/2 avocados
- 1 cup cherry tomatoes
- 12 slices fresh mozzarella
- 1 cup fresh basil
- 1-1 1/2 avocados
- 4 small cooked beets
- 1/2 cup goat cheese
- 1/2 cup pistachios, crushed (optional)
- 1 - 1 1/2 avocados
- 1 cup cherry tomatoes
- 1/2 cup fresh or frozen white corn
- 1/2 cup cilantro
- 1/2-3/4 cup queso fresco or feta cheese
- 1 cup balsamic vinegar
- 1 Tbsp. pure maple syrup (optional)
- Toast bread.
- Smash avocado and add salt and pepper as desired.
- Add toppings to toast. Drizzle with balsamic reduction and enjoy!
- Put vinegar and syrup in small saucepan and simmer over medium=low heat until reduced and syrupy, about 15 minutes.
- BEST EASY MEAL EVER!
