Veggie Challenge Day One! Yippee!
It’s officially day one of our four-week challenge to EAT MORE VEG. For those of you who have no idea what we’re talking about, let me explain…
We (as a human population in general) typically don’t eat enough veggies. Sure, we’ll eat a few baby carrots and celery sticks when they come out with our Buffalo Wild Wing’s entree 😉 but on the day-to-day basis, most of us are lacking.
Consuming adequate nutrients, minerals and fiber in our diet is SO IMPORTANT for our health. Over the years, inadequate veggie intake can contribute to some nasty diseases. No one wants that. So, we’ve decided to help you out.
We’ve been working overtime here, putting together a four-week challenge to motivate you to eat more veggies in your everyday meals. It can take a lot of time and effort to plan healthy meals incorporating veggies every day, so we’ve made it easy for you!
By signing up for the challenge, you will receive a handy-dandy little packet, which includes:
1) A list of veggies you need to eat by the end of the week.
2) A week’s worth of healthy recipes using those vegetables, nutrition facts included.
3) A detailed shopping list of every ingredient you’ll need to make all of the recipes.
You’ll receive a new packet every week for the four week challenge. And, just by signing up, you’re entered to win our GIVEAWAY PRIZES! Each week we’ll have a different giveaway, and those of you who follow along with the challenge will have the chance to win some awesome products from some of our favorite brands:

Loving this so far! I made the minestrone last night. I worked it out, but fyi the instructions didn’t match the ingredients — they mentioned celery (not a listed ingredient) but not the zucchini and pepper, so I improvised when to add those. Still delicious! Thanks!

Made the minestrone today. Had to sub cannelloni beans for the black beans (hubs won’t eat them). Came out great! Loved it.

I make a “lemon sludge” and put it on cereal, fruit, both and with dried, use it in place of yogurt and it’s refreshing and amazing: Pkge Soft tofu blended with juice and zest of 1 lemon and 1 packet stevia, monk fruit or other natural sweatener! (Banana, Dragon fruit, blueberries and mango is my favorite fruit mix tossed with this. Throw in dry rolled oat mix and it’s amazing!)
