How’s that VEGGIE CHALLENGE going? Are you loving your corn, beans and mushrooms yet? Thanks to all those who have enthusiastically embraced this challenge! We hope you find new ways to use veggies in your meals, get your family on board, feel better and have more all-around energy and health as you add veggies to your diet!
I know we had a dinner chock-full of veg last night…roasted root veggies, a huge salad and baked taters…and it was yummy! Even the boys loved it 😉 So here’s a super-easy-super-fast, one-dish meal (included as one of the recipes for the challenge) that should please even the pickiest: Vegetarian Tacos!
I remember my first true veggie quesadilla, a long, long time ago. We were in a little town in Mexico, south of Cancun, eating lunch at a small, oceanside restaurant, and I ordered the veg quesadilla. Wow. It changed my life! It was filled with broccoli, carrots, onions, tomatoes, and possibly yucca, all sautéed to perfection, with a creamy queso fresco all melty over the top, and stuffed in a handmade flour tortilla. Heaped with fresh guac and pico de gallo, it was heaven! I’ve never been so happy about a simple quesadilla! (Of course, I was sitting on the beach looking at the ocean. That could have contributed to my happiness level.) Regardless to say, I’m def on the Vegetarian Tacos train.
When you use fresh ingredients, your meal will shine, even as you make something as simple as a taco or quesadilla. Buy fresh vegetables, fruit and herbs as much as possible, and use quickly, while they are still fresh! We hope you will accept and love the Kiwi and Carrot Veggie Challenge! (New to the blog? Ingredients
- 1 Tbsp. extra-virgin olive oil
- 1 small onion
- 2 cloves garlic
- 1 cup cherry tomatoes
- 1-2 zucchini, (about 2 cups chopped)
- 6-8 mushrooms
- 1 cup black beans
- ¾ cup fresh or frozen corn
- Salt and pepper to taste
- 2 tsp. cumin
- 1 tsp. chili powder
- Juice of 1-2 limes (depending on how limey you want it)
- For topping: salsa, cilantro, plain Greek yogurt, grated cheese
- Tortillas (corn or flour)
Instructions
- Heat olive oil in pan.
- Add onion and sauté 5 minutes.
- Add garlic, veggies and spices and sauté until zucchini is cooked.
- Squeeze lime all over veggies.
- Build your taco with a tortilla, veg and toppings! Easy-peasy;)
Notes
*Be creative with your veggies! Add your faves...sweet potatoes, asparagus, squash, beets, peppers...anything!
