I am a list person. Are you? My family makes fun of me because I always have at least one “things to do” list going.
There are currently SEVEN to-do lists on my desk. I just counted them. SEVEN. I do have an explanation for this madness.
Our son is getting married in 10 days, and the reception’s in our backyard. Naturally I have seven lists of things that have to get done in the next seven days. AAAHHHH!!!!
However, there’s one list I DO NOT like…
A giant list of ingredients.
If I scan a recipe and there’s 25 things I have to get at 4 different stores all over the city, forget it. Move on. Hasta la vista, baby. This is why I am in LOVE with this 4 Ingredient Grilled Pepper Chicken. I mean, seriously, could it get any easier?
So, since I’m a list person, here’s my list for making dinner:
◊ EVOO (That’s extra-virgin olive oil)
◊ Garlic salt
◊ Pepper
◊ Chicken tenders
How impressive is that very teeny, tiny list? That is it. Beautiful. Such simplicity. Most people probably have all this stuff at home right now. And I’m telling you, this stuff is GOOD. It’s wolf-down-I-want-more-make-it-again-tomorrow good.
And just so you know I’m serious about my lists, here’s another one. Just look at some of the meals this stuff works AMAZINGLY with: chicken tacos, chicken wraps and sandwiches, southwestern chicken bowl, bbq chicken, chicken satay with peanut sauce, chicken salad of any kind, chicken quesadillas, the LIST goes on and on and on.
If you’ve got 15 minutes and a grill, you’ve got dinner. Now that is a no-brainer. (And don’t freak about the amount of pepper in this recipe. Trust us. It’s good.)
4 Ingredient Grilled Pepper Chicken. Cross “Plan dinner” off your list, ’cause it’s DONE.

Ingredients
- 1 1/2-2 pounds chicken tenders
- 2 Tbsp. extra-virgin olive oil
- 2 tsp. garlic salt
- 2 Tbsp. freshly ground pepper
Instructions
- Preheat grill.
- Thoroughly drain chicken. Toss with evoo in a mixing bowl.
- Add garlic salt and pepper. Stir to coat chicken.
- Grill chicken over medium heat, about 4 minutes per side, or until it reaches an internal temperature of 165 degrees.
Notes
*Serve this peppery chicken in a salad, with grilled veggies, in a southwest chicken bowl, in a wrap or sandwich or as chicken tacos. It will give any dish a delicious, spicy kick!
