I don’t think so. It’s a regular cornucopia! Berries. Tomatoes. Squash. Plums. Apricots. Pears. Basil. Corn on the cob. Beans. Melons…

And Peaches.

Yellow peaches. White peaches. And my new favorite discovery at our favorite local fruit stand: Donut peaches! Yes, there really is such a thing. Peaches that look like little donuts. How cute is that?

Peaches are really the crown jewel of August. There’s nothing better than a juicy, ripe peach, pure and simple, eaten like an apple, with sticky juices running down your fingers.

Peaches and Cream Smoothie Bowl: Peaches, bananas, coconut cream and vanilla, blended until smooth and topped with berries, peaches, nuts, coconut, etc.And so, of course, a PEACHES AND CREAM SMOOTHIE BOWL is a must this time of year! Oh so simple…basically peach, banana and a little coconut cream. If you want some added protein, throw in some collagen peptides! Smooth, creamy, perfect for breakfast or an afternoon snack on a lazy, hazy hot August day. A healthier substitute for ice cream. A midnight snack. A midmorning snack. A simple dinner.

Lay out all the toppings: berries, peaches, nut butter, coconut, dried fruit, nuts, granola…and let the kids get creative with their bowls. Make beautiful patterns on top and snap photos of their creations. Then eat quickly before the luscious goodness melts!

Peaches and Cream Smoothie Bowl

Prep Time: 5 minutes

Total Time: 5 minutes

Yield: one smoothie bowl

Ingredients

  • 1 frozen peach (cut into 4ths, remove pit, then freeze, skin on)
  • 1/2 frozen banana
  • 2 Tbsp. cold coconut cream
  • 1/2 tsp. vanilla extract
  • Cold water to consistency (approx one cup)
  • 1 scoop collagen peptides (optional)
  • Fresh peach slices, berries, nuts, coconut, nut butters, etc.as toppings

Instructions

  1. Put all ingredients in a blender, adding only half of the water at first.
  2. Blend until smooth, adding more water as necessary.
  3. Place in a bowl with favorite toppings.
  4. Eat immediately.
