All righty, moms….Here’s a week devoted to you and your kiddo who just walked in the room and said, “I’m bored. There’s nothing to do!” Have you had enough of trips to the zoo and aquarium? Art projects all used up? Has everyone just hit those mid-summer doldrums? (Or mid-winter blahs?) Well, these Berry Popsicles are a temporary cure. Grab the kids, don your aprons and start a new favorite activity: “Kids in the Kitchen!”
When I was about 6 years old, my elementary school started a summer class called, funny enough, “Kids in the Kitchen.” It was awesome. For a couple weeks in the middle of the summer, I got to go to school with my friends for an hour each day and make yummy recipes: no-bake cookies, spaghetti sauce, play dough, milkshakes. It was the best! School is cool in the summer when you’re six. I loved it. I think my very favorite recipe was “pigs in a blanket.” Little hot dogs wrapped in refrigerator biscuit dough and slathered in ketchup and mustard. Wow! Talk about six-year-old heaven.
So, we dedicate this week to moms and kids who need a kitchen project that’s fun to make, fairly healthy and delicious! (The kids don’t ever need to know these recipes are healthy. Keep that little tidbit a secret.) Plus, all these recipes are made to be frozen, so they are perfect for a hot, hot summer day!
First one: Berry Popsicles! All natural, three or four ingredients, whipped up in just a few minutes and eaten even faster! Just warn the kids ahead of time that these popsicles have to sit in the freezer for awhile first! Maybe you can go to the zoo again while you wait! Admit it…the baby giraffe is pretty darn cute. And you can get through anything knowing there’s a frozen treat waiting at home, right?
Ingredients
- 1 1/2 cups coconut milk
- 1/2 cup Greek vanilla yogurt
- 1 tsp. pure vanilla extract
- 1 tsp. lemon zest
- Raspberries and blueberries
- 4 ripe peaches (2 cups)
- 1 tsp. honey
- Raspberries and blueberries
Instructions
- Mix coconut milk, yogurt, vanilla and lemon zest together until smooth.
- In popsicle mold, layer berries with yogurt mix up to almost the top.
- Carefully poke a popsicle stick through the berries in the middle of the mold.
- Freeze until firm.
- If necessary, run under a little warm water to take out of mold.
- Eat immediately!
- Put peaches and honey in blender.
- Mix until smooth.
- Layer berries and peach mixture in popsicle mold.
- Freeze until firm.
Notes
*You will need popsicles molds for this recipe!
*Note that prep time is 5 minutes, but you will need to freeze these several hours or overnight.

This is so great! Brought back memories of when my mom used to make watermelon Popsicles mixed with whatever berries we had. Can’t wait to make some for these hot summer days!

Love popsicles! And these look great and so refreshing! I just made 3 batches (3!) last week and had so much fun. I may get tonsillitis from eating them all but I had fun lol! Coconut milk is a great idea. I’ll try it for batch 4 (or when we finish batch 3, which comes first lol).
