Cilantro. Lime. Cumin. Corn. Tomatoes. Mmmmmm. Those Mexicans have got a good thing going! My sister lived in Mexico City for seven years, and we were fortunate enough to visit her several times. That city is crazy! It’s enormous, with millions of people zooming around in millions of directions, for miles and miles and miles in every direction. But in the middle of all the crazy is some pretty amazing history, beautiful architecture, incredible culture and FOOD!
You can find foods from virtually every corner of the planet there, as well as some of the very best Mexican food I’ve ever tasted. This menu probably has nothing that is truly authentic to Mexico, but it’s a fun combo of south-of-the-border tastes. You could make this any time of the year, but in late summer, pluck the veggies from your garden or the farmers’ market to make this truly a meal to remember!
