Oh, St. Patrick’s Day…
I remember as a kid, going through my closet before school to pick out the greenest outfit I had. No pinches for me! Even if it meant wearing the ugly poo-green sweater at the back of my closet.
And then as I got a little older, I decided to get clever and wear no green at all…except for my underwear.
I’d get pinched by those unknowing fools, and then because I was actually wearing green, I’d get to pinch them “unlimited times” all day. I thought I was the most clever one in the class, until I realized you had to prove you were actually wearing green…
Jokes on me.
But green underwear or not, breakfast was always the best part of St. Patty’s day.
Green eggs and ham, green pancakes, green smoothies…my mom was that kind of mom. Of course she was. Above and beyond with every chance she could get to make our childhood magical.
And so this is where our Minty Shamrock Smoothie comes in.
If you need a quick green breakfast to throw together on St. Patrick’s day, here ya go. It’s minty, low fat, with a decent amount of protein to keep your energy levels balanced. And that GREEN! There will be no pinching at breakfast, especially if you wear this smoothie as a mustache all morning 😉
Ingredients
- 1 medjool date
- 2 handfuls spinach
- ½ frozen banana
- 1 tsp. cocoa powder
- ¼ tsp. pure mint extract
- ¼ small zucchini
- ¼ small cucumber, peeled
- 1 cup almond milk
- 6-7 ice cubes
- 1 scoop vanilla protein or unflavored collagen peptides *optional, see notes
- 1 tsp. spirulina *optional, see notes
Instructions
- Combine everything in a blender and blend until smooth. Enjoy immediately!
