Turkey Cranberry Paninis: The perfect Thanksgiving leftover lunch! Melty cheese, turkey, cranberry, fresh thyme and a little balsamic glaze to top it off.
Are you a turkey person?  I know there are turkey lovers and turkey haters out there. I absolutely LOVE most of thanksgiving dinner. Give me some mashed potatoes and gravy, homemade stuffing, a hot buttered roll and I am a happy girl. But turkey? I gotta admit, it’s not my fave. I eat the obligatory slice for dinner, but my focus is always on those sides.

HOWEVER. Thanksgiving leftovers? Now that’s a different story. My focus definitely turns to the bird. Not flipping it. Eating it.

With leftover cranberry sauce and melty brie cheese on a toasty piece of yummy artisan bread. Oh yeah, TURKEY CRANBERRY PANINIS might just be one of the best parts of Thanksgiving dinner. And it’s made from leftovers!

What’s your favorite part of Thanksgiving? Do you have any awesome traditions that you just can’t imagine skipping? Turkey bowl? Turkey run? Crafts? Football? After-dinner naps? After-dinner games? I know some families who go bowling every year on Thanksgiving night. Skiing? Swimming? Movies? Are you already in the throes of Christmas decorating?

Turkey Cranberry Paninis

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 6-8

Ingredients

  • *Amounts depend on your own preference!
  • One loaf crusty artisan bread
  • Dijon mustard
  • Leftover roasted turkey
  • Leftover cranberry sauce
  • Thinly sliced brie cheese
  • Balsamic glaze
  • Fresh thyme leaves, optional
  • Extra virgin olive oil (spray works best!)

Instructions

  1. Preheat panini maker. (See notes.)
  2. Slice bread.
  3. Build sandwiches with desired amount of mustard, turkey, cranberry sauce and brie.
  4. Drizzle with balsamic glaze and sprinkle with thyme.
  5. Brush or spray outsides of bread with evoo.
  6. Cook until cheese is melty and bread is cooked well.

Notes

*If you don't have a panini maker, just toast this as you would a grilled cheese sandwich.

*Be creative! Sub out your favorite cheese or even cream cheese. What about adding some roasted peppers instead of cranberry, and adding basil or oregano leaves? The sky's the limit on creativity here!
