And parties mean food. Like, not-so-healthy-but-completely-delcious food. Like these muffins. A.K.A. The Best Pumpkin Chocolate Chip Muffins.

I didn’t know they’d be the best. I just started throwing things at a bowl, hoping, crossing my fingers they’d turn out ok for the shower. And then the shower came and went, and I had multiple people asking me for the recipe to these muffins, because they were “the best pumpkin chocolate chip muffins.”

Hence, the name.

So, here ya go. These not-so-healthy-but-completely-delcious pumpkin muffins are now yours for the makin.

Make them for your sis-in-law’s baby shower, your niece’s birthday party, your best friend’s wedding shower or just for YOUR OWN DANG SELF. To be enjoyed for breakfast. Because who doesn’t love chocolate and pumpkin goodness for breakfast?

I used to truly believe that chocolate for breakfast made me feel sick. HA. What was I thinking? Chocolate for breakfast actually gives you a burst of undeniable energy that *CAN* last for hours if paired with a nutirent-dense protein source like scrambled eggs…(haha I’m laughing because this is the personal-trainer/health coach coming out in me…)

So. Make the muffins. Eat them with a glass of milk and a plate of scrambled eggs. And call it a breakfast for champions.

The Best Pumpkin Chocolate Chip Muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Yield: 12 muffins

Ingredients

  • 1 3/4 cups flour
  • 1/2 cup white sugar
  • 1/2 cup brown sugar
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 2 tsp. cinnamon
  • 1 tsp. pumpkin pie spice
  • 2 eggs
  • 1 [15 oz.] can pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1 tsp. vanilla extract
  • 1 tsp. orange zest
  • 3/4 cup chocolate chips

Instructions

  1. Preheat oven to 375 degrees. Line a muffin tin with paper liners, or grease with butter.
  2. In a large bowl, mix flour, sugars, baking soda, salt, cinnamon and pumpkin pie spice together.
  3. Add eggs, pumpkin puree, melted coconut oil, vanilla extract and orange zest and mix with a wooden spoon until incorporated. Gently fold in chocolate chips.
  4. Spoon into muffin tins and bake 15-20 minutes, or until an inserted knife comes out mostly clean.
