If you live in suburban or even rural America, you’ve most likely encountered cute little homemade lemonade stands on the side of the road. Three or four kids huddle around a table, with sticky hands and a homemade sign that says something like “Lemonade 25 cents!”  Well, I have had a hard, fast rule for ages. If I see one of these stands, I stop no matter what! Whether I know the kids or not, I’m buying lemonade from them. It’s a lot of work dragging table and chairs to a good street, making lemonade and the poster, and sitting for hours trying to make a few dollars! I should know. My own kids had years and years of lemonade stands, with countless people contributing to their summer fun funds!

I think there were summers that we probably had two or three stands a week…all summer long!  I don’t know what the draw was, but they LOVED selling lemonade. And it didn’t stop there. We’d make cookies, too, and they’d even try to sell their own original artwork. One week, I noticed they had painted rocks and were selling those. We were shameless in our unabashed use of the free market system!

I wouldn’t suggest using this recipe for a lemonade stand. Those are usually done with store-bought mixes, watered down by too much water and ice. (Cute, little children!) This recipe is a labor of love for close friends and family! Squeeze some limes, puree with berries and sugar, and let the flavors intensity as the mixture chills in the fridge for a few hours. Just in time…Raspberry-Mint Limeade is the perfect refreshing remedy for the sticky, hot days of summer! We hit our first 100-degree day this week, and I literally drank several glasses of this stuff mid-afternoon. Man, did it taste good!

Raspberry-Mint Limeade

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: About 10 cups

Ingredients

  • 3 cups fresh raspberries
  • 1 1/3 cups fresh lime juice
  • 1 cup sugar
  • 6 cups cold water
  • several sprigs fresh mint

Instructions

  1. Wash berries and puree. Press through fine-mesh sieve to remove seeds.
  2. Place berries, lime juice and sugar in blender and blend thoroughly.
  3. Combine with water in large pitcher. Stir to blend.
  4. Add mint and chill for several hours.
  5. Remove mint before serving.

Notes

*For best results, chill several hours before serving. Add sparking water, if desired. This is a fairly tart drink, which is what we love about it! However, you can adjust to your taste by adding more sugar or water.
