I am a heat/summer/sun addict. So naturally, I am currently mourning the loss of summer. The only thing getting me through it is this Maple-Pumpkin Fruit Dip.

This afternoon, we took the whole fam up the canyon to Snowbird Ski Resort for dinner. The mountain was on fire with bright yellow and orange aspens and red clumps of scrub oak, nestled among the vast dark pines all up the sides of the canyon. It was stunning. And, as it turns out, very deceitful. There was this slight breeze, which slowly became a bit more like a brisk wind. The temps started dropping, and by the time we arrived home, we had hit a huge autumn storm. Lightning, thunder, torrential rain…you name it. And to top it off, the power’s currently out, so that’s a fun time! As the first of many storms scheduled for this week, I’m guessing that we’ve seen our last 80-degree day, and autumn and winter are on their way.

So hallelujah for autumny (is that a word?) comfort food snacks like Maple-Pumpkin Fruit Dip! I’m always sad to leave the sunny, lazy, hot days of summer behind, but the prospect of pumpkin, maple, cinnamon and pears for a mid-afternoon snack does cheer me up! I guess it’s time to pull out the thick socks (I might not have worn socks at all for maybe the past four months), boots and sweaters.

Haven’t used the crock pot, either, for a very long time. Seasons keep things interesting for sure! Just as you think you might be running out of creative things to bbq, that soup pot starts to look mighty inviting. So long, Summer! Can’t wait to see you again in about 8 months. I think I’ll go drown my sorrows by whipping up a bowl of Maple-Pumpkin Fruit Dip…as soon as the power comes back on, that is.

Maple-Pumpkin Fruit Dip

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: About 1 1/2 cups

Ingredients

  • 8 oz. cream cheese
  • 1/2 cup canned pumpkin
  • 1 Tbsp. maple syrup
  • 1/2 cup brown sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. clove
  • 1/4 tsp. nutmeg
  • Fruit for dipping

Instructions

  1. Bring cream cheese to room temperature.
  2. Add all ingredients to blender and mix until smooth.
  3. Serve with pears, apples, bananas, other favorite fruits.

Notes

*This is also really good as a topping for pancakes, waffles, or crepes!
