There has been such a hype around the Instant Pot lately, we felt like we HAD to give it a try. We like to keep things simple for the most part…we stick with the basics. Crockpot, blender and food processor. BUT. We have now officially added the Instant Pot to our repertoire of cooking gadgets, because, it’s INSTANT. And amazing.

We tried a few different versions of this recipe before finding what worked best. But we are confident that you will love these Instant Pot Gingerbread Steel-Cut Oats. Obviously, we’re a bit gingerbread happy right now…(according to our raw gingerbread bars , gingerbread cake, gluten-free gingerbread waffles, etc.)

But we feel so good with that, because, Christmas.

Speaking of gingerbread…Has anyone actually taken the time recently to decorate their very own gingerbread house? And I’m not talking standing behind your 5-year-old playing quality control. (Floor and table quality control I mean, the gingerbread house will be goners for sure).

I hadn’t decorated one in years, but this year I sat down with my sister and future sis-in-law, and we spent a solid 2 hours decorating our houses. And you guys, it was SO FUN. I forgot how therapeutic it is piping plastic-tasting frosting around a tiny doorframe, and carefully lining gumdrops and rock-solid flavor-less candy balls along the rooftop. Christmas crafts are the best.

But because gingerbread houses are actually not very edible 😉 you can get your gingerbread kick from these Instant Pot Gingerbread Steel-Cut Oats. They are creamy, chewy and bursting with festive flavors of Christmas. And, hello… they are made in the INSTANT POT! Press a button, walk away.

That’s how breakfast should be every morning. 🙂

Instant Pot Gingerbread Steel-Cut Oats

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: 4-6

Ingredients

  • 1 cup steel-cut oats
  • 2 cups water
  • 1 cup coconut milk
  • Pinch salt
  • 1 tsp. ground ginger
  • 1/4 tp. cinnamon
  • 1 tsp. allspice
  • 1/4 cup molasses
  • 1/4 cup maple syrup
  • 1/4 cup rasins (optional)

Instructions

  1. Combine all ingredients in the Instant Pot and stir to combine.
  2. Lock on the lid and using the manual setting, set for 3 minutes. The Instant Pot will show "On" first, which means it is preheating. As soon as it's preheated, it will cook for the three minutes.
  3. When the time is up, let the pressure come down naturally, this will take about 15 minutes. You know it's ready when the float valve on top drops.
  4. Remove the lid and enjoy immediately!
  5. Leftovers can be kept in the fridge and reheated!

Notes

*Don't have an Instant Pot? No worries. You can make this on the stovetop. Just add all ingredients to a pot and follow the cooking directions on your steel-cut oat's package.
