Happy, happy birthday to my amazing husband, best friend and partner-in-crime, Drew! How lucky am I to be married to this guy!

I’ve never met anyone as generous, cheerful and positive as Drew. He is currently helping two of our kids remodel/build their houses, so basically he works like a crazy person all day long, wolfs down a little dinner (maybe) and helps them until 11 or 12 at night. And all with a genuinely cheerful face.

That’s just Drew. He’s constantly looking for someone who needs his help and then quietly just gets it done. And he’s always happy no matter what rough job he’s doing. I gotta say I found a really, really good one. Pretty much the best there is.

I had to post this recipe for Grilled Pork with Peaches and Basil today, on his actual birthday.

Drew is a pork guy. Look at a restaurant menu, and if there’s a grilled pork with a maple glaze and garlic-mashed taters, no question, he’s ordering that. He’s also a peach guy. Bring him fresh peaches, nectarines or raspberries and you’ve got a friend for life!

Fresh peaches sweeten the pork right up, and basil and balsamic give it a little kick. Marinate for a few hours and then grill it up. So easy!

Isn’t August THE BEST?! Love me some fresh peaches. Oh, and Drew, happy birthday! Love you to the moon and back…

Grilled Pork with Peaches and Basil

Prep Time: 2 hours

Cook Time: 20 minutes

Total Time: 2 hours, 20 minutes

Yield: 4-6

Ingredients

  • 1 pork tenderloin
  • 1 Tbsp. olive oil
  • 5 fresh peaches, peeled and pitted
  • 1/4 cup balsamic vinegar
  • 2 Tbsp. maple syrup
  • 1/4 cup fresh basil
  • Salt and pepper

Instructions

  1. Combine oil, two peaches, vinegar, maple syrup, basil and salt and pepper in blender or processor.
  2. Blend just until combined.
  3. Pour over pork and marinate two to three hours.
  4. Heat grill to high and turn down to medium.
  5. Grill over medium heat 10 minutes each side.
  6. Cut remaining peaches into halves and brush with olive or coconut oil. Place on grill, sliced-side down and grill 5-7 minutes. Serve with pork.

Notes

*Note that active prep time is about 5 minutes. The pork can marinate for 2-24 hours.

*If desired, after putting pork on the grill, pour marinade into a saucepan and boil for 10 minutes. The marinade will reduce and make a balsamic sauce to drizzle over pork and peaches. (Make sure to boil for 10 minutes to kill any bacteria from the raw meat juices.)
