Salsa.
To me, it’s one of those foods that means good times. Think about it. The majority of the time, when you’re eating salsa, it’s because you’re with friends or family doing something fun. (Or maybe that’s just how it is for me. Maybe the rest of the world sits at home alone digging into a bottle of salsa? 😉 )
Well, either way, to me salsa means parties at the cabin, lunch on the lake or dinner at our fav local Mexican restaurant. And if I have a choice of what kind we’re eating, you better believe it’s going to be this Fresh Nectarine Salsa. Garden tomatoes, juicy nectarines, crunchy jicama, avocados, lime…It doesn’t get better than this. Just dip a salty chip and summer. is. complete.
I remember the first time I tried fruit in my salsa. It was peach salsa from Costco. MIND BLOWN. From then on, I’ve kind of become a salsa snob, because if there’s not yummy, sweet chunks of something fruity to balance out all that spiciness, it’s just not a level 10 for me. #spoiled.
So…now that you know how I feel about fruity salsa, give this Fresh Nectarine Salsa a try. But be careful or you’ll become a salsa snob too. Just you wait.
Ingredients
- 2 ripe nectarines
- 2 small garden tomatoes (any variety)
- 1/3 cup jicama, chopped
- 1/2 avocado
- 1/4 cup red onion
- 1 jalapeño
- 1/3 cup cilantro
- Juice from one lime
- Salt and pepper to taste
Instructions
- Chop nectarines (peeled), tomatoes, jicama and avocado into bite-sized pieces.
- Dice the red onion and jalapeño and roughly chop the cilantro.
- Combine all ingredients in a serving bowl and add lime, and salt and pepper to taste.
- Mix and serve chilled with tortilla chips.

*This recipe is delicious with peaches as well!

What is Jimcama?
Raelene, Jicama is a white, crunchy, edible root. It doesn’t have a strong taste, but gives a delicious crunch! You can find it in the produce section of most grocery stores!

I’ve always just bought this type of fruity salsa (usually mango) from the grocery store – never thought about taking the time to make it myself, much less with nectarines. YUM YUM YUM! I’m a big fan of nectarines. I’m going to have to share this recipe with my folks, too. They’d love it 🙂
