When I think of these Cranberry Orange Muffins, I think of my dad.

This is one of those family recipes my mom has been making for us for years. A few Christmases ago, my mom gave my siblings and me a giant 3-ringed binder full of our fave family recipes. This one, of course, was included. It was titled “Drew’s Favorite Cranberry Orange Bread.” So, obviously, when I talk about these muffins, I need to talk a bit about my dad.

My dad is quite the man. He is an incredibly talented home builder and general contractor. He loves snowmobiling, Columbia fleece jackets, gourmet mustard, mini wipers (any guesses? 😉 ), exploring new places, and of course, fruit-filled desserts. He’s definitely a cherry pie and cranberry muffin kind of guy.

Besides all that, my dad is the most humble, hardworking and generous human being I know. Not to mention incredibly resourceful. Give him a problem–a real dooozy of a problem–and just wait. You won’t hear him complain. Ever. He never talks about how hard it’s going to be to solve the problem. Instead, he gets to work and finds a solution.

That is something I will always admire about my dad, and something I think we could all be a little better at.

Cranberry Orange Muffins

Prep Time: 10 minutes

Cook Time: 16 minutes

Total Time: 60 minutes

Serving Size: 12 muffins

Ingredients

  • 2 cups flour
  • 3/4 cup sugar
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. Kosher salt
  • 1/4 cup coconut oil, melted to liquid
  • 1 egg
  • 3/4 cup orange juice
  • Zest from 1 orange
  • 1 cup whole fresh/frozen cranberries
  • 1/2 cup chopped walnuts

Instructions

  1. Preheat oven to 350 degrees and put 12 paper muffin liners in a cupcake pan.
  2. Mix all ingredients until just combined.
  3. Spoon batter evenly into muffin pan and bake for about 20 minutes, or until a toothpick inserted in the middle come out clean.

Notes

*This can also be made into a bread loaf instead of muffins. This recipe will make 1 loaf. Doubles beautifully.
