Have you heard of John Montagu? Don’t think so? I bet you have. He’s the 18th century earl from the British town of Sandwich (you’re now saying, “ah ha” right?!) that supposedly ordered his valet to bring him “beef between two slices of bread” so he wouldn’t have to leave the gambling table for dinner. Ha ha! Whether it’s true or not, that name, sandwich, has probably become one of the most widely eaten foods of all time.

Random fact: apparently, Americans eat, on average, 200 of them per person every year. Whoa! That’s a lot of Sandwich! I wonder how many of those are the lowly but delicious PB&J?

Okay. Pretend it’s September and we’re starting anew. Here’s a fast, tasty, healthy lunch idea that can be personalized for your own tastes. In fact, call the kids and hubby into the kitchen and let them make their own! Now we’re talking. In five minutes, you’ve turned plain old cream cheese into something special: Veggie Wraps with Sun-dried Tomato Cream Cheese. Stuff your fave veggies into a wrap, slather on that cream cheese, and you’ve got a fabulous lunch going. Hallelujah! Slump is over…at least for today.

Veggie Wraps with Sun-dried Tomato Cream Cheese

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: 2-3 large sandwich wraps

Ingredients

  • 1/2 cup vegetable or regular cream cheese
  • 2 Tbsp. sun-dried tomatoes in olive oil
  • 2 cloves garlic
  • 4 large basil leaves
  • 2 tsp. chives
  • 2-3 large wraps
  • Favorite veggies: peppers, cucumber, tomatoes, avocado, sprouts, zucchini, mushrooms, snap peas, radishes, green onions, etc.

Instructions

  1. Put cream cheese in small bowl.
  2. Finely chop tomatoes, garlic, basil leaves and chives. Mix into cream cheese and let sit while preparing wraps.
  3. Thinly slice desired veggies.
  4. Spread cream cheese over wrap and add veggies. Roll up wraps, cut in half and enjoy!
