Is there anything better than sitting in the freshly mown grass on a breezy summer day? Taking a long, meandering walk which leads to nowhere? Playing board games all night with your kids? The older I get, the more I love the simple stuff of life. I don’t want to fill my life with Fancy or Complicated or Important. I’d rather keep life small and simple. It’s pretty hard to do these days, but I’m giving it my best effort.

Here’s a treat that fits right in with Simple. Smoked Salmon and Egg Avocado Toast is basically  the best “egg salad” sandwich you’ve ever had in your life, elevated to perfection! Scrambled egg, smashed avocado cream cheese and smoked salmon on a toasted piece of fresh pumpernickel…to be eaten in your pajamas on a late Saturday morning with a glass of freshly squeezed grapefruit juice…just because.

Because avocado toast is genius. It’s easy, cheap, healthy, creative and has no end to variations. Breakfast, lunch, dinner, snack. Possibly the perfect meal. And definitely one of the simple pleasures of life.

Smoked Salmon and Egg Avocado Toast

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 4-6

Ingredients

  • 1 avocado
  • 1/4 cup vegetable or plain cream cheese
  • 1 tsp. lemon juice
  • Salt and pepper to taste
  • 4 eggs
  • 1 tsp. extra-virgin olive oil
  • 2 tsp. fresh chives
  • Salt and pepper to taste
  • 4-6 slices pumpernickel bread
  • 4-6 slices smoked salmon (We used Foppen Smoked Norwegian Salmon Slices from Costco)
  • Honey mustard dill sauce (or favorite vinaigrette)

Instructions

  1. Smash avocado with cream cheese, lemon juice and salt and pepper. Set aside.
  2. Whisk eggs. Add about 2 Tbsp. water for fluffier eggs.
  3. Scramble eggs in EVOO on stove over low heat. Fold in fresh chives and season with salt and pepper.
  4. Toast bread. Spread avocado mixture on toast; add eggs on top. Place a piece of salmon on top of eggs and drizzle sauce or vinaigrette over the top.
  5. Serve immediately!

Notes

*Foppen Smoked Norwegian Salmon comes with a packet of delicious Honey Mustard Dill sauce. It's amazing on these toasts! If you're using your own brand of salmon, any vinaigrette or dill-based sauce will be delicious!
