Roast Beef, Brie and Pepper Jelly Sliders

Roast beef, brie and pepper jelly sliders! Add some melted herb butter and a quick cook in the oven for a delicious hot sandwich!
Why is it that a normal, every-day food just tastes better when it’s small? Take the sandwich. A roast beef sammie for lunch is absolutely fine. Put it on a little slider bun, however, and OH BABY!!!! It is cute, more fun to eat and for some odd reason, seems to taste better. Hence these Roast Beef, Brie and Pepper Jelly Sliders!

Really, SMALL is just cute in any package, isn’t it? Hiking boots are fine. Put teeny tiny Timberlands on a baby, however, and people become lunatics, oohing and aahing over how cute they are! Case in point: Jack. Jack is my first grand baby. (I am NOT old enough for that. I’m sure of that fact.) He is also (obviously) Sarah’s first nephew on our side.

Jack is the cutest thing ever, and our entire world has become focused on this little human. We don’t watch movies together any more. Or play games. We used to, but it’s way more fun to just sit around and watch Jack. His latest trick: rolling over. Riveting. We can watch that for hours. Toes. Fingers. Jeans. Shoes. Sweaters. Hoodies. Hats. You name it, it’s cuter on Jack. Make something small and it’s suddenly much more enticing.

That same concept goes with food, too! Those baby bananas? CUTE. Baby artichokes? ADORABLE. Bite-sized mint brownies? As long as I can eat 5 of them, DELECTABLE!

Roast beef, brie and pepper jelly sliders? WAYYYYY better than a big ol’ sandwich.  Add to the cuteness of a slider the fact that this combo is an EXPLOSION of flavor in your mouth, and you know you have scored big time. You can even leave off the glaze if you’re feeling lazy…although who wouldn’t want a good dose of melty herbed butter on their slider? After all, it’s only a teeny tiny bit of butter on this teeny tiny roll, right?

Roast Beef, Brie and Pepper Jelly Sliders

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Yield: 12 sliders

Ingredients

  • 12 slider buns
  • 1 pound deli rare roast beef (We like Boar's Head London Broil), *you can also use deli turkey
  • 12 oz. brie cheese
  • 1 small package soft herbed cheese, like Boursin Shallot and Chive
  • 1 small jar pepper jelly *See notes!
  • Poppy Seed Glaze
  • 1/4 cup butter
  • 1 tsp. poppy seeds
  • 1 tsp. Worcestershire sauce
  • 1 tsp. dried onion
  • 1/2 tsp. stoneground mustard

Instructions

  1. Preheat oven to 350 degrees.
  2. Assemble sandwiches: Spread soft cheese on one side of buns, and add roast beef, slices of brie and a dollop of pepper jelly.
  3. Place on a cookie sheet, brush with glaze and bake for 5-10 minutes, until cheese melts.
  4. Poppy Seed Glaze
  5. Melt butter in microwave and add all other ingredients. Brush onto tops of buns before baking.

Notes

We just buy our pepper jelly at our local grocery store! We recommend the brands "Dickinson" and "Stonewall Kitchens." You can also order one of our faves here!

    Elizabeth… you are correct, these are adorable little sandwiches. But after having the pleasure of eating them at your home a couple of weeks ago, I have been fantasizing about them on the daily. They are HUGE in flavor and deliciousness and hit every button for sweet, salty, savory, creamy. What a fantastic sandwich combo! You’ve done it again!

      We usually just buy it at the grocery store. We like the brands Dickinson and Stonewall Kitchens, here’s one that we love!
