Ah, the summer neighborhood lemonade stand: a handful of cute but grubby children milling around, their sticky fingers holding a hand-painted sign begging every person who drives by to stop and try their watery, pale-pink, Kool-aid concoctions. You’ve seen ’em in your neighborhood, haven’t you?

I made it a goal years ago to never pass up a lemonade stand. I mean, we gotta encourage those little entrepreneurs, right? Plus, my own kids made a pretty substantial chunk of change peddling their lemonade, so I figure I gotta pay it forward. And it’s just the saddest thing to drive past and see their little shoulders slump and cardboard signs fall to the ground. Who wants to be the cause of that disappointment? Not me. I stop every time.

A few weeks ago, I actually drove past a stand, realized what I’d done, whipped around and headed back towards the kids. There they stood, holding a collective breath in anticipation. They must’ve not had many takers that day, because they were sure eager when I pulled over…

I’ve never had such service; they were offering me all kinds of napkins, a cupful of lemonade, free refills and a free cookie to go with it! And you should’ve seen them when I pulled out my wallet, handed them the only money I had, a five dollar bill, and said, “Keep the change!” Literally, the national lottery winner couldn’t hold a candle to those six kids in one sweaty little circle, doing a happy dance and cheering and rejoicing. They’d apparently hit the motherlode.

You probably don’t want to make this Peachy Lemonade for the curbside stand. As my hubby says, “It’s too good for kids.”

Grab a tub of the cheap powder for the stand, and then whip up a batch of the good stuff for yourself. And you better hurry…peaches are at their prime this very second,  but they won’t last long…

And I don’t think pumpkin lemonade would be quite the same.

Peachy Lemonade

Yield: About 7 cups

Ingredients

  • 3 large, ripe peaches (about 2 1/2 cups)
  • 4 cups water
  • 1/2 cup sugar
  • 3-4 mint sprigs (plus extra for garnish)
  • 1 cup lemon juice (about 5 large lemons)

Instructions

  1. Peel and coarsely chop peaches. Place in medium saucepan with water, sugar and mint sprigs.
  2. Bring to boil, lower heat and simmer 3 minutes.
  3. Turn off heat and let cool in pan for about 10 minutes.
  4. Pour into blender and blend until completely smooth. Refrigerate for an hour to cool.
  5. Combine peach mix with lemon juice and serve chilled.

Notes

*Make this ahead of time and refrigerate. It's even better the next day!
