LOW COUNTRY BOIL! (pronounced “Bull.”) Oh, I am SO excited to share this one. Y’all, this is THE ULTIMATE easy dinner for a crowd.

I honestly have so much gratitude for those southerners in the “low country” who cook the most incredible foods! This one’s borrowed from them, and OH MY, is it a winner! (Just count the exclamation points in this post!) This is our family’s signature meal for a crowd. And such a no-brainer.

Hello…ONE pot, 40 minutes, no dishes (just use paper plates) or even serving dishes! That’s right. What could be more simple? Ya just roll butcher paper down the middle of your table and pile on the food right there. Everyone just stabs at what they want until they’re stuffed full. Could anything be more perfect? We should eat all our meals like this.

So, the first time I made this, we were down at our heaven-on-earth happy place, Lake Powell. Picture this: 20 people, sunburned and happy from a day on the lake, top of the houseboat, sun going down, moon coming up, soft breeze, stars beginning to twinkle…you get the picture. Heavenly, right? Only……have you noticed that boys turn into ravenous wolves when they’re hungry? Can you say “feeding frenzy?” It was almost scary.

They were giddy and giggling as they furiously poked forks into succulent lobster, shrimp and potatoes, and wolfed them down as fast as they could. No waiting or “please pass”-ing involved.  We now just refer to it as “The Frenzy.”

Summer’s not over, ya know. Plan the ultimate backyard feast…to be remembered all winter long by every single one of your guests! The easiest, most delicious feast you’ll ever throw together…the Low Country Boil. I declare, it’s the best thing y’all will ever be fixin’ to eat.

Low Country Boil

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: 20-25

Ingredients

  • 40 red potatoes (I use 2/3 Costco bag of reds)
  • 1 jar Old Bay seasoning
  • 2 Schilling Shrimp Boil spice packs
  • 3 Tbsp. Cajun seasoning
  • 1 large red onion
  • 1 lemon
  • 3 lbs. cooked spicy chicken sausage (or your favorite cooked sausage)
  • 12 ears corn on the cob
  • 4 lbs. fresh uncooked shrimp (tails on)
  • 4 lbs. langostino lobster tails (I also buy these from Costco) - you can also use crab or any other favorite seafood
  • Condiments: melted butter with lemon and/or garlic, fresh lemon wedges, cocktail sauce, spicy mustard, BBQ sauce, etc.
  • Butcher or parchment paper for table

Instructions

  1. Fill extra-large pot halfway with water. We use a 6-gallon pot with a basket liner on an outdoor burner.
  2. Cut potatoes in fourths, chop sausage into bite-sized pieces and husk corn.
  3. Add potatoes and seasonings to pot. Roughly chop onion and add to pot. Squeeze lemon juice into pot and add the lemon pieces.
  4. Bring potatoes to a rolling boil. Once they're boiling, add sausage and corn. Cook for 5 minutes.
  5. Add shrimp and lobster and turn heat off. Stir to make sure seafood cooks.
  6. Roll out parchment or butcher paper all along the middle of the table. Lay out condiments.
  7. Drain water from pot. (This is SO easy if you have a basket that you can just lift out of the water)! Remove seasoning packets and cooked lemon pieces, and spoon all across the middle of the table. Dig in!

Notes

*You can obviously cut the amounts WAY down and cook this on your stove top in a smaller pot. However, the Low Country Boil is meant to be shared and enjoyed by a crowd! That's the beauty of it. There's no easier way to feed a huge group, and it is such a fun (EASY) meal to prepare and eat. Party in a pot!

*If you do make a smaller batch, don't worry too much about amounts. Just throw some seasonings in a pot, add the goods and cook away! This is a no-thinking kind of meal!
