Has anyone else noticed the HALLOWEEN costumes in Costco? Or the sweaters and boots crowding out the swim suits and shorts on the shelves of Target? (Ya, I’m a Target shopper, don’t judge.) Like, come on people. It’s August! We’re not ready to kiss our sweet summer goodbye quite yet. We’re still over here lapping up homemade ice cream and spooning Fresh Corn-off-the-Cob Salad into our mouths.

Summer produce. Yummmmm.

“Behind the scenes” secret…once we’d photographed this, my mom and I sat next to each other with forks and dug in. Before we knew it, the plate was clean. Yup, just a normal day in the Kiwi and Carrot kitchen. 😉 However, this particular dish is quickly taking its rightly-deserved place at the top of my “fave-summer-salads” list. Why? Because:

1) That corn. Fresh from our local farmers market stands (yay Tagges!) and SO juicy and flavorful.

2) Those garden tomatoes, picked by my hands. (Does anyone else have the problem where every time they pick tomatoes from the garden they smell like tomato plants for the rest of the day?)

3) Feta + lime. Need I say more?

Fresh Corn-off-the-Cob Salad

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 4-6

Ingredients

  • 1/2 lbs. bacon
  • 4 ears fresh corn, uncooked
  • 1 cup cherry tomatoes, halved
  • 1-2 shallots, thinly sliced
  • 1/2 cup chopped jicama *(See notes)
  • 1 Tbsp. extra-virgin olive oil
  • Juice of 1-2 limes (start with one and add until satisfied with taste)
  • Salt and pepper to taste
  • Feta cheese for topping
  • Handful of fresh basil

Instructions

  1. Cut bacon into small, bite-sized pieces. Place in a skillet and cook until crispy. Remove from pan and dab away excess grease with a paper towel.
  2. Using a sharp knife, carefully cut corn off the cob and place in bowl.
  3. Add cherry tomatoes, shallots and chopped jicama.
  4. Toss with olive oil, lime juice and season with salt and pepper.
  5. Top with bacon bits, feta cheese and fresh basil.

Notes

*If you've never used jicama, prepare to be pleasantly surprised! You can find it in most grocery stores in the produce section. It looks like a VERY large light-brown turnip. Peel or cut off the skin and eat the white inside! It has a mild, crunchy taste and texture and works great for dipping in hummus or adding to salads!
