Did you know that some of the coolest things around were invented by mistake?

Take the slinky. The guy that invented the slinky, a naval engineer named Richard James, was actually trying to create a spring to keep equipment steady at sea. That was in 1943, and the classic slinky’s still slinkin’ around 74 years later!

Everyone probably knows that penicillin came about by mistake, but did you know that chocolate chip cookies, potato chips, silly putty, corn flakes and post-it notes were all meant to be something else?!

Well, Cinnamon Oat Butternut Squash Pancakes were not necessarily invented by mistake, but the flavor combo sure was. Sarah had some leftover squash from dinner, and we wanted to use it in something. Aaaaand, since Kodiak Cakes is one of our very fave companies, and they have an AMAZING new flavor, Cinnamon Oat, we thought, let’s combine the two!

Well, that leftover butternut had been seasoned with rosemary. Hmmm. Weird? Never heard of rosemary-flavored pancakes before, but what the heck? We figured we could just leave the rosemary out of the recipe, and all would be right with the world.

Okay, hold on to your forks. Turns out Cinnamon Oat Butternut Squash Pancakes WITH ROSEMARY are DE-LI-CIOUS!!! Like amazingly delicious. We stood at the counter and ate the whole stack right there. Of course, we knew Kodiak Cakes would make a grand beginning, but squash and rosemary? HOLY COW! That is one amazing pancake. And the added little bonus secret to the whole thing? Your kids will never know that there are ORANGE VEGETABLES in their breakfast. HA! A kitchen coup of epic proportions.

Cinnamon Oat Butternut Squash Pancakes

Prep Time: 5 minutes

Cook Time: 10 minutes

Total Time: 15 minutes

Yield: 4-6

Ingredients

  • 1 cup butternut squash, roasted
  • 1 tsp. dried or fresh rosemary
  • 1 cup Kodiak Cakes Cinnamon Oat Mix
  • 1 egg
  • 1 cup milk or non-dairy milk substitute (almond, coconut, etc.)
  • 1/4 cup crushed walnuts
  • More walnuts + maple syrup for topping

Instructions

  1. Smash squash and add rosemary.
  2. Mix all ingredients together.
  3. Cook on griddle to desired doneness and serve hot with walnuts and maple syrup.

Notes

*This is the perfect way to use leftover squash of any kind! You can always microwave, steam or roast squash just for this recipe, if you don't have any left over from another meal.

**If you don't like the taste of rosemary, you can leave it out, but we think it makes these Oh So GOOD!!!

    I love Kodiak cakes! And I love the (accidental) creativity of these pancakes. These totally sound like something you’d pay $15 for at a fancy brunch place! Can’t wait to try them!
