“NO SOUP FOR YOU!” Do you recognize that quote? If you’ve ever watched “Seinfeld,”  the hilarious sitcom about basically nothing, you’ll be familiar with the classic episode entitled “The Soup Nazi.” It’s one of my favorites. The “Soup Nazi” basically discriminates against people he doesn’t like, for whatever reason, as he serves (or refuses to serve) them at his soup counter. It’s a classic! I’ve been watching Seinfeld reruns recently on Netflix as I fold and iron laundry. I had forgotten how funny that show is!

Are you a soup person? I LOVE soup…basically, any kind of soup. There’s nothing quite like a steamy bowl of chowder or French onion to warm up cold toes and fingers.  My son, Thomas, however, isn’t much of a soup fan. I think it just doesn’t fill him up enough. Unless it’s a huge bowl of meaty chili, he would rather eat a steak or chicken breast.

Maybe that’s a thing with guys. Is soup more of a female kind of food? Now that I think about it, most guys don’t usually order soup at restaurants. “You get soup or salad with that.” They usually get the salad. Maybe we should take a survey of soup eaters to find out the ratio of male to female soup eaters at restaurants.

You know, this is starting to sound like a Seinfeld episode: The Soup Survey. I bet Kramer would LOVE to take charge of that one.  In any case, here’s to SOUP! Whether you love it for an appetizer, snack or dinner, we think soup is essential, especially to survive these cold, bleak winter days! SOUP FOR YOU!

Chipotle Butternut Squash Soup

Prep Time: 15 minutes

Cook Time: 25 minutes

Total Time: 40 minutes

Yield: 4-6

Ingredients

  • 1 Tbsp. extra virgin olive oil
  • 1 large yellow onion
  • 1 butternut squash (2 1/2 - 3 lbs.)
  • 2 apples
  • 1 pear
  • 4 cups chicken stock
  • 1 Tbsp. chipotles in adobo
  • 2 tsp. cumin
  • ½ tsp. cinnamon
  • ¼ tsp. cayenne pepper
  • Salt and pepper
  • 1/2 - 1 cup coconut milk

Instructions

  1. Saute onion in olive oil until soft.
  2. Peel and roughly chop squash, apples and pear.
  3. Add all ingredients except coconut milk. Bring to boil, lower heat and simmer until squash is soft.
  4. Add coconut milk and puree in blender until desired consistency.

Notes

*We buy fresh, chopped butternut at Costco to avoid the step of peeling and chopping. Much easier!

*Add more or fewer chipotles depending on your heat preference.

*Garnish with pepitas or chopped nuts, plain Greek yogurt and cilantro.
