Think creamy, cheesy, buttery, crunchy…literally heaven in your mouth. I decided right then and there I would start liking sweet potatoes. And what do you know? Now they pop up on my grocery list almost weekly…

Sweet potatoes are named one of “the world’s healthiest foods,” and for good reason! They are rich in vitamins and minerals that are essential for your body. They have a sweet taste, but their natural sugars are slowly released into the bloodstream, which gives you that balanced and long-lasting source of energy. They are filling, nutritious and so versatile.

3-Ingredient Cheesy Layered Sweet Potatoes combine sweet potatoes, Pecorino cheese, melted butter and nutmeg in a simple but deliciously savory side dish!
This dish is even better because it only takes THREE ingredients to make! (Spices don’t count, people.) It’s so incredibly easy to throw together. You just pop it in the oven and voila! An impressively delicious and savory side dish for your feast.

3-Ingredient Cheesy Layered Sweet Potatoes

Prep Time: 20 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 10 minutes

Yield: 4-6

Ingredients

  • 3-4 Tbsp. butter, melted
  • 2 lbs. (about 4) sweet potatoes
  • 2 cups Pecorino cheese, grated
  • Freshly ground nutmeg
  • Salt and pepper

Instructions

  1. Preheat the oven to 425 degrees.
  2. Pour 1 Tbsp. melted butter in a round cake pan or porcelain dish and brush around until pan is coated.
  3. Peel the sweet potatoes and slice into thin circles.
  4. Place a layer of sweet potatoes on the bottom of the pan and cover with some grated cheese, drizzled butter, salt, pepper and nutmeg.
  5. Repeat the layering process until all the ingredients are used up.
  6. Cover with foil and bake for 45 minutes, then take off the foil and bake for an additional 10-15 minutes, or until the sweet potatoes are cooked through.

Notes

*Make sure to use a very hard and dry cheese. We recommend Pecorino. Parmesan is an acceptable alternative.

    This recipe looks absolutely heavenly. Unfortunately my first experience with sweet potato anything was a mushy and over-sweet casserole with layers of marshmallows. I am so relieved to see this amazing looking version of a sweet potato dish and just in time for Thanksgiving! I could pop those potato pieces in my mouth like potato chips! Great recipe, thanks for sharing.

      Thanks Makenna! Yes…I’m not a fan of those “candied” versions of mushy sweet potatoes. This is a good one because it has a savory, buttery flavor, and roasting the potatoes gives them a slight crunch…no mushiness here! Hope you like it. Happy Thanksgiving!

    OH MY GOD….these look so heavenly! Had to Pin them! I love sweet potatoes and these would be a perfect Thanksgiving side dish instead of the same ol’ same ol’ mashed or topped with marshmallows.

      It’s true! Sweet potatoes are yummy no matter how they’re eaten. But, it’s always fun to mix it up with a little cheese and nutmeg 🙂
